Salmon with Avocado Garlic Spread

I initially made the avocado spread to go with a chicken wrap I was having for lunch one day. I was only planning to post the recipe for the spread but as I thought longer about it, I thought this would be really good with salmon. So, here you are!

You can also use this spread for so many other things. Use it as a spread for your wraps or sandwiches, sauce for your tacos, dressing for your salad, or a dip for your crackers.

Salmon with Avocado Garlic Spread

Salmon

  • 1 lb Salmon (filets)
  • Cajun Seasoning (to taste)
  • Salt (to taste)

Avocado Spread

  • 1 Avocado
  • 3 tablespoons Lime Juice
  • 4 Garlic Cloves (finely chopped)
  • 2 tablespoons Cilantro
  • 1 teaspoon Honey
  • 1 pinch Salt

Quinoa

  • 1 ½ Cups Quinoa
  • 3 Cups Chicken Broth
  • 1 teaspoon Cilantro
  • 1 teaspoon Lime Zest
  • Salt (to taste)
  1. In a medium saucepan, bring your chicken broth to a boil. If it is salt-free, add a pinch of salt. Add your quinoa and cook based on your package’s directions. Add your cilantro and lime zest. Stir and set aside.

  2. Season your salmon with Cajun seasoning and salt.

  3. Heat a large skillet to medium-high heat and drizzle with olive oil. Place your salmon in the pan, skin side up. Cook for 3-4 minutes, flip, and cook another 2-3.

  4. Turn the heat off and cover your pan with a lid. Let it sit for 10 minutes.

  5. In a bowl, smash the avocado. Add the remaining ingredients, mix together and you’re done!

If your Cajun Seasoning already has salt in it, you probably won’t need to add more to your salmon. The same goes for your chicken broth and quinoa. Make sure to taste everything before adding too much salt.
