Zesty Lime Chicken

I make a lot of chicken. It goes well with almost anything but sometimes it takes time to come up with different ways to prepare it. I could have baked chicken every week and not get tired of it. It’s one of my favorites, but I know everyone may not feel the same. Here’s an easy way to switch it up and add some more flavor to one of your weeknight meals or add this to your rotation for your weekly meal prep!


Zesty Lime Chicken

  • 3 lbs Chicken Thighs
  • 1 Cup Italian Dressing
  • 2 Bell Peppers
  • 1 Medium Onion
  • 1 Lime (zest and juice)
  • 1 ½ Cups Jasmine Rice
  • 3 Cups Chicken Broth
  • 1 tbls Cilantro
  • Salt (to taste)
  1. Place your chicken in a large plastic bag or a shallow dish. Cover with Italian dressing and let it marinate for 30 minutes to an hour.

  2. Slice your bell peppers and onion and spread evenly in a casserole dish. Lightly salt.

  3. Preheat your oven to 375° F. When your chicken is ready, place on top of your peppers and onion. Squeeze lime juice on top, and bake for 45 minutes to an hour.

  4. In a sauce pan combine your rice and chicken broth. Add salt if your broth is salt free. Follow the cooking directions on your package.

  5. When your rice is ready, stir in the zest of 1 lime and your cilantro.

  6. Serve your chicken on top of your rice and enjoy!
