Crockpot Bourbon Chicken

I remember at some point graduating from ordering Orange Chicken, to discovering the beauty of Bourbon Chicken and never turning back. I actually forgot how much I enjoyed it. It also brings back memories of me sitting in the food court at the mall with my best friend. Any time my food is associated with a good memory, I love it that much more. So here’s to my teenage years spent at the mall ❤️

Crockpot Bourbon Chicken

  • 3 lbs Chicken thighs (boneless, skinless)
  • 1 cup Bourbon
  • ¼ cup Soy sauce
  • ⅓ cup Brown sugar
  • 1 tablespoon Fresh ginger (grated)
  • 1 Shallot (chopped)
  • 2 Garlic cloves
  1. Turn your crockpot on high and set for 6 hours.

  2. Cut your chicken thighs into cubes and whisk together your remaining ingredients. Add to the crockpot and cook for about 6 hours.

  3. Serve over rice and enjoy!

If your sauce isn’t as thick as you’d like once finished cooking, add everything to a large saucepan and cook for about 5 minutes or until the sauce reaches the consistency you’d like. Just be careful not to cook it for too long because the sugar in the sauce can burn quickly.
