This is a perfect example of how sometimes I’m just winging it in the kitchen (and in life, let’s be honest). I had every intention to do candy cane rice krispie treats and I went to reach for something in the pantry and saw cocoa powder. I love mint and chocolate so I decided to try it. I split the recipe in half because I honestly wasn’t sure how it would turn out, but I loved it! If you like mint and chocolate, add the cocoa powder. If not, leave it out! I think these are even better the next day because the mint flavor gets into the whole treat!
Mint Chocolate Rice Krispie Treats
- 4 tbsp Butter
- 10 oz Marshmallows
- 1 tsp Vanilla Extract
- Pinch of Salt
- 6 Cups Rice Krispie Cereal
- 12 Candy Canes (crushed)
- 2 tbsp Cocoa Powder
- Cooking Spray

If using the microwave, you can melt your butter and marshmallows together, using 30 second intervals. If using the stove, melt your butter first and then add your marshmallows.

Add your teaspoon of vanilla, a pinch of salt and cocoa.

Add your Rice Krispie cereal and before it’s completely mixed add in your candy canes.

Spray a 9×13 pan and dump your mixture in. If you need to pack it down, spray your hands as well and press the top until it’s as packed as you like.
You can eat them immediately or let them set for about 20 minutes before cutting.
Have fun with the shapes. You can make triangles, or skip the pan entirely and roll these into balls. Just make sure that whatever you use to shape or cut these, are sprayed with cooking oil so it doesn’t stick.
