I started making these about a year ago. There was a Halloween baking competition at work and I was trying to find the perfect cookie to go with the theme. My solution was multi colored chips! I thought this was great! I had the normal chocolate chip, white chocolate chips, and orange colored, pumpkin flavored chips. Who was going to be more creative than that?? Then I showed up and someone had baked a brain cake and someone else had a smoke machine… Needless to say, I didn’t win, BUT everyone who tried them loved them and everyone who has tried them since has loved them too!
The list of ingredients may seem intimidating but I promise this is a pretty simple recipe and you don’t even need an electric mixer for it! Use whatever chips you like. Sometimes when I can’t find the pumpkin chips, I use cinnamon chips, which are actually much easier to find. Whatever you do, have fun! ♥️
Pumpkin Spice Chocolate Chip Cookies
- ½ Cup Butter (melted)
- ¼ Cup Granulated Sugar
- ¾ Cup Brown Sugar
- 1 Egg Yolk
- 1 tsp Vanilla
- ⅓ Cup Canned Pumpkin (not pumpkin pie filling)
- 1 ¼ Cups Flour
- ½ tsp Baking Soda
- ¼ tsp Salt
- 2 tsp Pumpkin Pie Spice
- ¼ tsp Ground Cloves
- ¼ Cup Semi-Sweet Chocolate Chips
- ¼ Cup White Chocolate Chips
- ¼ Cup Cinnamon or Pumpkin Flavored Chips

In a large bowl, whisk together your melted butter, granulated sugar, and brown sugar.

Add your egg yolk, vanilla, and pumpkin. Whisk until smooth.

Add your flour, baking soda, salt, pumpkin pie spice, and cloves. Mix using a wooden spoon until combined.

Stir in your chips and your dough is finished! You can chill your dough for about an hour if you want thicker cookies but I bake mine right away.

Roll your dough into balls and place 1-2 inches apart. I use a small ice cream scoop but you can make them whatever size you’d like. I typically make 2 dozen from one batch so, adjust the baking time based on the size. Whenever you’re ready to bake, preheat your oven to 350° F and bake for 10-15 minutes.

Take these out of the oven and let sit 2-3 more minutes on the baking sheet then transfer to a cooling rack, if they make it that far 😊
